Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 carrot, chopped
  • 1 red onion, sliced into half moons
  • 1 head of broccoli, chopped
  • 1 container Grape Tomatoes, cut in ½ 
  • 3 Tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • Preheat oven to 500°F.
  • Chop all veggies into large pieces.
  • Chop chicken into cubes.
  • Place chicken and veggies in a medium roasting dish or sheet pan and add olive oil, salt, pepper, Italian seasoning, and paprika. Toss to combine.
  • Bake for 20 minutes or until the veggies are charred and chicken is cooked. Enjoy with rice, pasta, or a salad.
